Blueberry Lemon Poppy Seed Muffins

1 package prepared HelloAmino Your Dream Muffin
1 whole lemon, zest ONLY
3/4 cup frozen blueberries (or raspberries)
1/2 cup unsweetened apple sauce
1 tbsp poppy seeds

Preheat oven to 375. Line a muffin tray with paper liners.
Prepare the batter according to directions on the back using applesauce option given. Stir in lemon zest and poppy seeds. When your oven is ready gently fold in frozen blueberries
(don't let the batter sit after adding berries)
Fill each muffin tin 3/4 full (do not overfill) and bake for 13-16minutes.
Cool in the muffin tin for 5 minutes after baking before cooling fully on a rack.
Store in a sealed container for 2 days or freeze in a Ziploc to enjoy later.

Peppermint Cheesecake Brownies

Brownie Layer

1 batch prepared HelloAmino Potein Brownie Batter

Cheesecake Layer

1 package cream cheese, room temperature
1/4 cup sugar
1 tbsp cornstarch
2 tbsp plain Greek yogurt, 2 % fat
1 tsp vanilla
1 tsp peppermint extract
1 whole egg, room temperature

Preheat oven to 350. Line a 9x9 cake pan with parchment
(don't skip this step for easier removal)

In a bowl, mix together cream cheese, sugar and cornstarch with a hand mixer
until smooth (2 mins).

Add yogurt, vanilla, peppermint extract and mix until combined.
Add the room temperature egg and mix until fully incorporated.

Add prepared HelloAmino brownie batter to the
bottom of the pan and then top with cheesecake mixture.

Bake for 28-32 minutes until the center only has a slight jiggle. Let fully
cool in the pan and then cover and refrigerate for at least 6 hours to fully
set. Slice into 12 squares and enjoy. They freeze well!

Raspberry White Chocolate Muffins

1 package HelloAmino Your Dream Muffin Mix
2 whole large eggs
6 tbsp oil
1.5 tsp vanilla
1/2 cup unsweetened apple sauce
1 cup frozen whole raspberries
1/3 cup white chocolate chips

Preheat oven to 375. Line a muffin tray with paper liners.
Mix the first 4 ingredients together and then gently fold in raspberries and white chocolate chips.
(don't let the batter sit after adding berries)
Fill each muffin tin 3/4 full and bake for 12-15 minutes.
Cool in the muffin tin for 5 minutes after baking before cooling fully on a rack.
Store in a sealed container for 2 days or freeze to enjoy later.

Cranberry Orange Muffins
1 package HelloAmino Your Dream Muffin Mix
2 whole large eggs
6 tbsp oil
1.5 tsp vanilla
1 large orange, zest only
1/2 cup unsweetened apple sauce
1 cup frozen whole cranberries

Preheat oven to 375. Line a muffin tray with paper liners.
Mix the first 6 ingredients together and then fold in cranberries.
Fill each muffin tin 3/4 full and bake for 12-15 minutes.
Cool in the muffin tin for 5 minutes after baking before cooling fully on a rack.
Store in a sealed container for 2 days or freeze to enjoy later.

Pumpkin Spice Cookies

1 package HelloAmino Snickerdoodle Mix

5 tbsp (75g) unsalted butter, room temperature

3 level tbsp canned pure pumpkin

1 whole large egg

1 tsp vanilla

1/2 tsp pumpkin spice

Optional; add 1/4 tsp pumpkin spice to the cinnamon sugar mixture.

Follow the directions on the back of the snickerdoodle mix.

Pumpkin Cheesecake Brownies

1 pkg cream cheese, room temperature
1/4 cup sugar
1 tbsp cornstarch
1/4 cup canned pumpkin, room temperature
2 tbsp plain Greek yogurt, 2 % fat
1 tsp vanilla
1 tsp pumpkin pie spice
1 whole egg, room temperature

Preheat oven to 325. Line a 9x9 cake pan with parchment (don't skip this step for easier removal)

In a bowl, mix together cream cheese, sugar and cornstarch with a hand mixer until smooth (2 mins).
Add pumpkin, yogurt, vanilla and pumpkin spice and mix until combined.
Add the egg and mix until fully incorporated.

Add prepared HelloAmino brownie batter to the bottom of the pan and then top with cheesecake mixture.

Bake for 28-32 minutes until the center only has a slight jiggle. Let fully cool in the pan and then cover and refrigerate for at least 6 hours to fully set. Slice into 12 squares and enjoy. They freeze well!

1/2 cup canned pure pumpkin

1 tbsp chai spice blend. Recipe below

(2 tbsp cinnamon, 1/2 tbsp ground ginger, 2 1/4 tsp ground cardamom, 1/2 tsp ground nutmeg, 1/2 tsp ground cloves)

1 1/2 tsp vanilla

2 whole large eggs

optional topping: Mix 1 tsp chai spice blend with 1 tbsp white sugar. Top on muffins before baking.

1 package of HelloAmino Your Dream Muffin Mix

6 tbsp oil

1/2 cup grated carrots

1/2 cup unsweeteend apple sauce

1/4 tsp each; nutmeg, cinnamon and ground ginger

1/8 tsp cloves

1 1/2 tsp vanilla

2 whole large eggs

Maple Peach Mug Cake

1/2 cup prepared Maple Pancake Mix

1/2 small peach, diced

sprinkle of cinnamon

10g granola

Coat a microwave safe mug with cooking spray. Add 1/2 cup HelloAmino pancake batter to mug. Top with peaches, cinnamon and then granola. Microwave 60-90 seconds.

Chocolate Zucchini Muffins

1 package HelloAmino Your Dream Muffin Mix

6 tbsp oil

2 whole large eggs

3/4 cup 2% plain Greek yogurt

1 zucchini, grated

3 tbsp cocoa powder

Preheat oven to 375

Mix all ingredients together. Line a muffin tin with liners and bake for approximately 12-15 minutes. Let cool 5 minutes in the muffin tray and then remove to fully cool on rack.
Store in a sealed container in the fridge or freeze.

Sugar Brookie Bites

1 package prepared HelloAmino Sugar Cookie Mix

1 package prepared HelloAmino Brownie Mix

Optional; coloured sprinkles

Preheat oven to 350.

Line a mini muffin tin. Add 1 1/2 tsp of brownie batter to the bottom of each muffin liner and then top with the same amout of sugar cookie dough. Top with sprinkles and bake for approximately 14 minutes. Let cool 5 minutes before enjoying. Contains approximately 4g of protein per bite!

French Toast Waffles

1 package prepared HelloAmino Cinnamon Pancake Mix

2 eggs

1/4 cup unsweetened almond milk

1 tsp cinnamon

1/4 tsp nutmeg

1 tsp vanilla extract

Prepare your pancake mix according to instructions.

In a separate bowl, mix together eggs and next 4 ingredients.

Cook in your waffle maker and then cut each waffle into four pieces.

Dip each piece into the egg mixture and cook in a skillet over medium high heat for 2 minutes a side.

Top with whipped cream and strawberries!

Brownie Waffles

1 package prepared HelloAmino Cinnamon Pancake Mix

2 tbsp cocoa powder

2 tsp vanilla

1/2 cup dark chocolate chips

1 tbsp oil

Mix everything together except the chocolate chips. Add batter to waffle maker and then sprinkle chocolate chips over top. Cook according to waffle maker instructions.

Apple Crisp Mug Cake

1/2 cup prepared HelloAmino Cinnamon Pancake Mix

1/2 granny smith apple, peeled and diced

1 tsp buttter

2 tsp brown sugar

1/8 tsp cinnamon

1 tbsp chopped pecans

Topping

1/8 cup quick oats

1 tsp melted butter

1 tsp maple syrup

1/8 tsp cinnamon

dash of salt

In a skillet over medium heat, saute butter and apples for 2-3 minutes, stirring often. Add in brown sugar and stir to coat. Add cinnamon and pecans and cook another minute. Remove from heat and set aside.

In a small bowl combine oats and the next 4 ingredients.

Coat a large microwave safe mug with cooking spray. Add in 1/2 cup prepared pancake mix, top with apples and then oat mixture. Microwave for 90 seconds. Let sit for 1 minute before enjoying.

Maple Banana Walnut Pancakes

1 package HelloAmino Maple Pancake Mix

1 cup water

1 egg

¼ cup overripe mashed banana

1 tsp vanilla extract

¼ cup crushed walnuts

Mix everything together and make as per usual. To turn into a mug cake, coat a microwave safe mug with cooking spray and pour in ½ cup prepared batter. Microwave for 60-90 seconds.

Pumpkin Spice Pancakes

1 package HelloAmino Cinnamon Pancake Mix

1 cup water

1 egg

¼ cup canned pumpkin

1 tsp vanilla extract

1 tsp pumpkin spice

1 cup water
2 eggs
¾ tsp ground ginger
¼ tsp each; nutmeg, allspice & ground cloves
2 tsp molasses

Mix everything together and make as per usual. To turn into a mug cake, coat a microwave safe mug with cooking spray and pour in ½ cup prepared batter. Microwave for 60-90 seconds.

 

Eggnog Pancakes

1 package HelloAmino Cinnamon Pancake Mix
1 cup eggnog
2 eggs
¼ tsp nutmeg
1/8 tsp ground cloves
1 tsp vanilla extract

Mix everything together and make as per usual. To turn into a mug cake, coat a microwave safe mug with cooking spray and pour in ½ cup prepared batter. Microwave for 60-90 seconds.

 

Apple Cinnamon Pancakes

1 package HelloAmino Cinnamon Pancake Mix

1 cup water

1 egg

¼ cup applesauce

¼ tsp nutmeg and allspice

Mix everything together and make as per usual. To turn into a mug cake, scoop out ½ cup prepared batter, add ¼ cup grated apple (if desired) and put into a microwave safe mug. Microwave for 60-90 seconds.

 

Mexican Hot Chocolate Mug Cake

½ cup prepared HelloAmino Cinnamon Pancake Mix

1 tsp cocoa powder

1 tbsp dark chocolate chips

Pinch of cayenne

Mix all ingredients together. Coat a microwave safe mug with cooking spray and pour in batter. Microwave for 60-90 seconds.

 

Carrot Cake Mug Cake

½ cup prepared HelloAmino Cinnamon Pancake Mix

1 small carrot, grated

Dash nutmeg

1 tbsp crushed walnuts

½ tsp vanilla extract

Mix all ingredients together. Coat a microwave safe mug with cooking spray and pour in batter. Microwave for 60-90 seconds.

Chocolate Coffee Mug Cake

½ cup prepared HelloAmino Cinnamon Pancake Mix

1 tsp cocoa powder

3/4 tsp instant espresso powder

1 tbsp dark chocolate chips

Mix all ingredients together. Coat a microwave safe mug with cooking spray and pour in batter. Microwave for 60-90 seconds.

 

Maple Pecan Mug Cake

½ cup prepared HelloAmino Maple Pancake Mix

¼ tsp cinnamon

¼ tsp vanilla extract

1 tbsp chopped pecans

Mix all ingredients together. Coat a microwave safe mug with cooking spray and pour in batter. Microwave for 60-90 seconds

 

Peanut Butter Chocolate Chip Mug Cake

½ cup prepared HelloAmino Maple Pancake Mix

1 tbsp creamy peanut butter

1 tbsp chocolate chips

Mix all ingredients together. Coat a microwave safe mug with cooking spray and pour in batter. Microwave for 60-90 seconds

 

Banana Cinnamon Mug Cake with Brown Sugar Glaze

1 package HelloAmino Cinnamon Pancake Mix

1 cup water

1 egg

¼ cup overripe mashed banana

1 tsp vanilla extract

Glaze

2 tbsp brown sugar

2 tsp butter

Splash of milk

Prepare full pancake mix and then remove ½ cup for a mug cake. (save the rest in the fridge, it will keep up to 5 days) place the reserved half cup into a microwave safe mug coated with cooking spray. Microwave for 60-90 seconds.

To make the glaze; Combine all ingredients in a small bowl and microwave until bubbly. Stir every 10 seconds until a caramel is formed. Drizzle over warm mug cake
