🎉 Birthday Cake Protein Cake Pops (High-Protein, No-Bake)

If birthday cake muffins are the everyday version, these Birthday Cake Protein Cake Pops are the extra version.

They’re fun. They’re nostalgic. They feel like a treat without turning into a sugar bomb.

I originally made these to bring to friends, and the reaction was immediate. Everyone was shocked they were high-protein and gluten-free because they tasted like something straight out of a bakery.

Ingredients

1 pouch HelloAmino Muffin Mix
1/2 cup Plain Greek yogurt (swap for banana, pumpkin, or applesauce as directed on the pouch)
2 whole eggs
6 tbsp oil (I like coconut) or melted butter
2 teaspoons cake batter or butter vanilla extract
2 1/2 tsp vanilla extract
2 tbsp Birthday cake sprinkles (plus extra for garnish)

6 tbsp softened cream cheese

White chocolate, melted (for coating)
Sprinkles (if desired)

Instructions

Preheat oven to 375°F.

Prepare the HelloAmino Muffin Mix by combining yogurt, eggs, oil and extracts. Add the full pouch of muffin mix and then fold in sprinkles. 

Bake in 12 lined muffin tin for ONLY 11 minutes.

Let fully cool and then crumble into a bowl. Add softened cream cheese and mix until fully combined. Using your hands roll into 1 1/2 inch balls and refrigerate for 1 hour.

Dip into melted white chocolate and sprinkle if desired. Let set in the fridge or freezer.

The inside stays soft and cake-like, while the chocolate coating gives that classic cake pop finish. They feel indulgent, but they actually satisfy.
