Inspired by the classic Southern favourite, this version is loaded with real crushed pineapple, coconut, a little crunch from pecans, and a protein-packed cream cheese icing that’s honestly elite.

Here’s how to make it:

📝 Hummingbird Protein Cake
Makes 2 ramekins. (Share one… or don’t.)

Cake:
✨ ½ cup HelloAmino Maple Pancake Mix
✨ 1 egg yolk
✨ 3 tbsp water
✨ ⅓ cup crushed pineapple (in juice, not syrup)
✨ 2 tbsp unsweetened shredded coconut
✨ 35g crushed pecans
✨ Dash cinnamon
✨ ½ tsp vanilla

Mix everything together, divide between two large ramekins, and air fry at 325°F for 18 minutes. Let cool before icing.

Frosting:
✨ 2 tbsp plain Greek yogurt
✨ 2 tbsp softened cream cheese
✨ ¼ cup HelloAmino Icing Mix

Mix until smooth and dreamy. Top cooled cakes generously.
