1 egg yolk
1 tsp oil (I used coconut)
1 tbsp plain 0% Greek yogurt
50 g diced mango or peach

Crumble Topping

1 tbsp oats
1 tbsp HelloAmino Muffin Mix
1/2 tsp butter
Dash of salt

Protein Cream Drizzle

1 tbsp half & half
1/2 tbsp HelloAmino Icing Mix

How to Make It

Mix the muffin base
In a small bowl, mix together the muffin mix, maple creamer mix, egg yolk, coconut oil, Greek yogurt, and diced mango or peach.

Prepare the crumble
In a separate bowl, mix the oats, muffin mix, butter, and a dash of salt using your fingers until crumbly.

Assemble
Spoon the muffin batter into a greased, oven-safe 8 oz ramekin. Sprinkle the crumble evenly over the top.

Bake
Air fry at 350°F for 10 minutes, or until set and lightly golden on top.

Make the protein cream
Stir together the half & half and icing mix until smooth.

Finish & enjoy
Drizzle the protein cream over the warm muffin and enjoy immediately.
