Lemon Streusel Muffins

These simple lemon muffins will give you all the Summer vibes. Fresh and light with a sweet streusel topping! 

1 bag prepared HelloAmino Your Dream Muffin batter (using applesauce)
1 1 /2 large lemon, zest only

Streusel Topping

1/4 cup flour (I used gluten free)
2 tbsp white sugar
1/2 lemon, zest only
1 tbsp butter, room temperature

Preheat oven to 375.

Fold in the fresh lemon zest and set batter aside while you make the streusel.

Mix all the streusel ingredients in a small bowl, using a fork, until just crumbly (don't overmix).

Fill each lined muffin tin no more than 3/4 full and then top with streusel. Bake 12-15 minutes until both top and sides are golden brown.

Let cool at least 5 minutes in muffin tin and then remove to allow to fully cool before storing covered for up to 3 days or freeze for later.

Tips: Add blueberries, white chocolate OR cream cheese flavored chipits for an extra indulgence!
