Snickerdoodle cookies are one of my favourites and take me right back to my childhood. I love anything cinnamon sugar really. So, I wanted to recreate that nostalgic flavour into a muffin and these did not disappoint!
The perfect quick breakfast idea for Christmas morning.
1 bag prepared HelloAmino Your Dream Muffin batter (using applesauce)
1 1 /2 tsp cinnamon
Cinnamon Sugar Topping
1/2 tbsp cinnamon
2 tbsp white sugar
1-2 tbsp butter or ghee, melted
Preheat oven to 375.
Mix all the cinnamon sugar together in a small bowl.
Fill each lined muffin tin no more than 3/4 full and bake 12-15 minutes until both top and sides are golden brown.
Let cool at least 5 minutes in muffin tin and then remove. Brush tops and sides with melted butter/ghee and then dip into cinnamon sugar. Store well covered for up to 2 days or freeze for later.
