Cheesecake stuffed Snickerdoodle

Cinnamon and sugar are two of my favourite flavours. This single serve cookie hack will be your new obsession. I’ve stuffed them with cream cheese but feel free to make it without for a lower calorie version while still tasting indulgent.

Makes two cookies

8 tbsp HelloAmino snickerdoodle cookie mix
4 tsp softened butter 
1 egg yolk

2 tbsp cream cheese, softened
1/2 tsp white sugar
splash vanilla

Combine cream cheese, sugar and vanilla until smooth. Divide in half. Form two small disks. Set on parchment and put in the freezer.

Add the first 3 ingredients to a small bowl. Using your hands work into a large smooth ball, ensuring butter is fully incorporated.

Divide into four. Take your cream cheese disks and wrap two pieces of dough around each disk. Roll in cinnamon sugar and press down slightly to form two large cookies. 

Bake in an air fryer at 325 for approximately 9-10 minutes or 350 oven for approximately 12 minutes or until golden brown.

Let stand 5 minutes before enjoying.
