Pumpkin Chai Muffins

1 package of HelloAmino Your Dream Muffin Mix
6 tbsp oil
1/2 cup canned pure pumpkin
1 tbsp chai spice blend. Recipe below
(2 tbsp cinnamon, 1/2 tbsp ground ginger, 2 1/4 tsp ground cardamom, 1/2 tsp ground nutmeg, 1/2 tsp ground cloves)
1 1/2 tsp vanilla
2 whole large eggs
optional topping: Mix 1 tsp chai spice blend with 1 tbsp white sugar. Top on muffins before baking.
Preheat oven to 375 Mix all ingredients together. Line a muffin tin with liners and fill each muffin tin NO MORE THAN 3/4 full. Bake for approximately 12-15 minutes or until edges and top are golden brown.
Let cool at least 5 minutes in the muffin tray and then remove to fully cool on rack. Store in a sealed container in the fridge or freeze.
