📝 Ingredients:
1/2 cup HelloAmino Cinnamon Pancake/Waffle Mix
1 whole egg yolk
3 tablespoons water (NOT milk)
Quick spray of coconut oil
1/4 granny smith apple, peeled and diced
1 teaspoon butter
2 teaspoons brown sugar
1/8 teaspoon cinnamon
8g chopped pecans
For the oat topping:
1/8 cup quick oats
1 teaspoon melted butter
1 teaspoon maple syrup
1/8 teaspoon cinnamon
Dash of salt
👩🍳 Directions:
In a small bowl, whisk together the first 4 ingredients until smooth. Set aside.
In a skillet over medium heat, sauté the diced apples in butter for 2 to 3 minutes, stirring often. Add brown sugar, stir to coat, then add cinnamon and pecans. Cook for another minute, then remove from heat.
In a separate small bowl, combine the oats, melted butter, maple syrup, cinnamon, and salt to make the topping.
Lightly coat a large microwave-safe mug and pour in the pancake batter, spoon the sautéed apples over the top, and sprinkle with the oat mixture.
Microwave for about 90 seconds. Let it sit for one minute before digging in.
