Blueberry Lemon Poppy Seed Muffins

1 package prepared HelloAmino Your Dream Muffin mix

1 whole lemon, zest ONLY
3/4 cup frozen blueberries (or raspberries)
1/2 cup unsweetened apple sauce
1 tbsp poppy seeds

Preheat oven to 375. Line a muffin tray with paper liners.
Prepare the batter according to directions on the back using applesauce option given. Stir in lemon zest and poppy seeds. When your oven is ready gently fold in frozen blueberries
(don't let the batter sit after adding berries)
Fill each muffin tin 3/4 full (do not overfill) and bake for 13-16 minutes.
Cool in the muffin tin for 5 minutes after baking before cooling fully on a rack.
Store in a sealed container for 2 days or freeze in a Ziploc to enjoy later.
