Banana Cinnamon Mug Cake with Brown Sugar Glaze

1 package HelloAmino Cinnamon Pancake Mix

1 cup water

1 egg

¼ cup overripe mashed banana

1 tsp vanilla extract

Glaze

2 tbsp brown sugar

2 tsp butter

Splash of milk

Prepare full pancake mix and then remove ½ cup for a mug cake. (save the rest in the fridge, it will keep up to 5 days) place the reserved half cup into a microwave safe mug coated with cooking spray. Microwave for 60-90 seconds.

To make the glaze; Combine all ingredients in a small bowl and microwave until bubbly. Stir every 10 seconds until a caramel is formed. Drizzle over warm mug cake.
