Lemon Poppy Seed Protein Cheesecake

A quick Summer dessert that's refreshing and feels indulgent but still keeps you aligned with your wellness goals.

Serves 1

1/4 cup HelloAmino vanilla pudding mix
1/3 cup skim high protein milk
1/2 lemon, zest only
2 tbsp cream cheese
1/4 tsp poppy seeds

1 graham cracker, crushed (GF available)
coconut oil spray

In a small pot over medium heat mix together the pudding mix with milk using a silicone spatula. Cook stirring continuously until smooth and thickened, about 3 minutes. Fold in the lemon zest, cream cheese and poppy seeds.

In a small dish add the crushed graham crackers to the bottom and spray lightly with coconut oil to form a crust. Pour the pudding mixture over and cover with plastic wrap (directly over the pudding to avoid a skin forming) Refrigerate for at least 1 hour.
