PB & J Protein Pudding Cup

PB&J never gets old and this recipe will satisfy your cravings while helping you reach your protein goals.
Call it dessert or breakfast, either way it's delish!
Pudding layer
1/4 cup HelloAmino Vanilla Pudding mix
1/3 cup high protein milk
1 tbsp peanut butter powder
"Jam" layer
15g strawberries, chopped
2 tsp water
1/4 tsp vanilla extract (optional)
1/2 tsp sweetener of choice
2 Biscoff cookies or GF graham crackers, crushed
Coconut oil spray
10g dark chocolate chips
1/4 tsp coconut oil
crushed pretzels or peanuts for garnish (optional)
Prepare the pudding according to package directions with the addition of PB powder. Set aside to cool.
In a small pot combine strawberries, water and sugar and cook over medium heat until soft.
In a small mason jar or dish layer crushed Biscoff/ GF graham crackers on the bottom and spray lightly with coconut oil.
Top with half the pudding and then cooked strawberries and then the rest of the pudding.
Melt the chocolate in the microwave at 10 second increments until melted and smooth.
Cover pudding layer with melted chocolate and garnish with pretzels or peanuts if desired.
Refrigerate for 1 hour to fully set.
