Ice cream and I decided it was friends off about 6 months ago.
I can digest small amounts of dairy and the whey we use doesn't bother me but a bowl full of ice cream and I am bloated and in agony for the rest of the day.
But as Summer is approaching (it's hard to tell in Calgary) I've been craving ice cream and decided to get creative with our protein cookies.

Simply sandwich two cookies (I used snickerdoodle) between a couple tbsp of frozen coconut whip and dig in!
