Eggnog Protein Pie

This single serve hack is going to be your holiday dessert obsession. So quick to make, with only 5 ingredients and 18g of protein.

Filling

1/4 cup HelloAmino Protein Vanilla Pudding mix
1/3 cup eggnog of your choice (I used silk festive nog)
dash of cinnamon and nutmeg
1 heaping tbsp so delicious coconut whip, thawed

Crust

2 shortbread cookies, crushed
2 tsp butter, melted

Prepare pudding by mixing everything BUT the coconut whip in a small pot over medium heat.

Use a silicone spatula to smooth out the pudding mix and cook, stirring continuously, until thickened.

Pour into a small bowl, cover directly with plastic wrap and refrigerate 45 minutes.

Prepare crust by combining crushed cookies with melted butter. Press into a large ramekin and refrigerate 15 minutes.

When pudding is fully cooled, fold in thawed coconut whip. Pour onto crust and then crumble over more shortbread if desired.

If you want to make a family sized version: Make the entire bag of pudding and use 10 oz shortbread with 5 tbsp of melted butter and pour into a 9" pie plate.
