2 whole large eggs
6 tbsp oil
1.5 tsp vanilla
1 large orange, zest only
1/2 cup unsweetened apple sauce
1 cup frozen whole cranberries
Preheat oven to 375. Line a muffin tray with paper liners.
Mix the first 6 ingredients together and then fold in cranberries.
Fill each muffin tin no more than 3/4 full and bake for approximately 15 minutes or until edges and top are golden brown.
Cool in the muffin tin for at least 5 minutes after baking before cooling fully on a rack. Store in a sealed container for 2 days or freeze to enjoy later.
